Comments:This is a quodlibet, a type of composition, quite popular in the 16th century, that combines two or more well-known melodies. Fricassée (meaning "ragout") is a tour-de-force incorporating phrases from at least 39 identified contemporary chansons by Sermisy, Janequin, Josquin, Mouton, Willaert and others. It was first published in Pierre Attaignant's 1536 collection, Second livre contenant XXV chansons ("Second book containing 25 songs").
