| Comments: | This is a quodlibet, a type of composition, quite popular in the 16th century, that combines two or more well-known melodies. Fricassée (meaning "ragout") is a tour-de-force incorporating phrases from at least 39 identified contemporary chansons by Sermisy, Janequin, Josquin, Mouton, Willaert and others.
